Introducing Pumpkin Spice Overnight Oats, a quick and easy recipe that combines the seasonal taste of pumpkin with the heart-healthy benefits of oats. Not only is this dish delicious, but it's also packed with fiber, antioxidants, and essential nutrients that support overall wellness.
Oats are a powerhouse ingredient known for their ability to lower cholesterol and reduce inflammation, making them an excellent addition to your diet, especially when consumed regularly.
Ingredients:
- 2 cups unsweetened non-dairy milk
- 1 tsp pumpkin pie spice
- 4-6 pitted dates (or 1 tablespoon of pure maple syrup)
- 2 cups pumpkin puree
- 2 cups old-fashioned rolled oats
- Cinnamon to taste
- **Optional Toppings**: Chopped walnuts, apples, or pears
Directions:
1. Blend the non-dairy milk with the dates and pumpkin pie spice. If you're using maple syrup, you can skip this step.
2. In a medium bowl, mix the blended milk with pumpkin puree and oats.
3. Cover and refrigerate overnight or for at least one hour.
4. Serve chilled or warmed, adding more non-dairy milk if needed for your preferred texture.
5. Optional: Top with walnuts, apples, or pears for added crunch and flavor.
