SQUASH AND ZUCCHINI RIBBON SALAD RECIPE

INSTRUCTIONS

  • 1 zucchini
  • 2 yellow squash
  • 1 tsp salt
  • 2 tsp fresh lemon juice
  • 1 Tbsp Olive Oil
  • 1/2 tsp black pepper
  • Optional: 2 Tbsp fresh parsley (or any herb)
  • 1/2 tsp lemon zest

DIRECTIONS

  • Wash and use a vegetable peeler to shave squash into thin ribbons.
  • Toss yellow squash and zucchini with salt in a large bowl.
  • Whisk lemon juice, olive oil, black pepper, parsley, lemon zest in a small bowl: pour over squash ribbons. Toss to coat.

BONUS TIP:
Use the inside core to make a quick dip, zucchini bread or add to your compost.
